The guide
Buenos Aires is a European city that eats Italian food under a Spanish name and calls it Argentine. Waves of migration from Italy and Spain built the menu: pasta on Sundays, milanesa in every café, pizza with an amount of cheese that has to be seen. The other half is beef. The parrilla is an institution, cuts are named differently from anywhere else, and the fire is wood or charcoal rather than gas. Meals happen very late, with dinner at 22:00 being ordinary. Wine is cheap and good. The coffee is mediocre and the pastries make up for it.
Where to focus
Four neighbourhoods to anchor a few days of eating
Palermo
The largest barrio, split into Soho and Hollywood. Where most of the modern restaurants, wine bars, and closed-door dining rooms are.
San Telmo
The oldest quarter, cobbled and faded. The Sunday market, old parrillas, and the covered Mercado de San Telmo from 1897.
Chacarita & Villa Crespo
Where cooks now open when Palermo gets expensive. Smaller rooms, natural wine, and neighbourhood pizzerias that have not changed.
Recoleta
Formal, French-influenced architecture and the old cafés. Confiterías serving medialunas and coffee to people who have come for decades.
What to eat

Asado
· Beef grilled slowly over wood coals, served in courses starting with offal. A social event that occupies an afternoon rather than a meal. - 02
Milanesa
· Breaded veal or beef cutlet, fried, sometimes topped with ham and cheese as a napolitana. Café food in every barrio. - 03
Empanadas
· Baked or fried pastries, filled by province: Salta with potato, Tucumán juicier, Buenos Aires with olive and egg. - 04
Pizza porteña
· Thick crust under an enormous quantity of mozzarella, often with fainá, a chickpea flatbread, laid on top. Eaten standing at the counter. - 05
Dulce de leche
· Caramelised milk, in everything: alfajores, pastries, straight from the jar. Not the same as Mexican cajeta. - 06
Mate
· Yerba steeped in a gourd and shared through one metal straw, refilled and passed around. Social ritual rather than a drink you order.
Practical notes
Meal timing, tipping, payment
Lunch 13:00 to 15:30. Dinner does not start before 21:00 and restaurants fill at 22:00. Parrillas serve enormous portions; one cut between two is normal. Tipping is around 10 percent and cash is preferred for it. Bring US dollars in cash because the parallel exchange rate matters a great deal here. Many kitchens close Sunday night and Monday.
