The guide
Fez has the oldest continuously inhabited medina in the world and cooks the most conservative Moroccan food in the country. Where Marrakech has adapted for visitors, Fez largely has not. The cooking is imperial rather than rustic: sweet and savoury together, long braises in clay, saffron and ras el hanout used with confidence, and pastry work that came from Andalusia when Muslims and Jews were expelled from Spain. Much of the best food here is served in houses rather than restaurants. The medina has no cars, roughly nine thousand lanes, and the food stalls are found by smell more reliably than by map.
Where to focus
Four neighbourhoods to anchor a few days of eating
Fes el-Bali
The old medina, and the reason to come. Food stalls along Talaa Kebira, bakeries where families bring their own dough, and riads serving set dinners.
Fes el-Jdid
The 13th-century extension, including the Mellah, the old Jewish quarter. Different bread, preserved foods, and a calmer pace than the main medina.
Ville Nouvelle
The French-built new town. Cafés, patisseries, and the restaurants Fassis go to when they are not eating at home.
Rcif & the tanneries
The market area below the tanneries. Butchers, olive stalls, and the produce that supplies the medina, best in the early morning.

Pastilla
· Pigeon or chicken in warqa pastry with almonds, cinnamon, and icing sugar. Sweet and savoury together, and the signature Fassi dish. - 02
Tagine
· Slow braise in a conical clay pot. Lamb with prunes, chicken with preserved lemon and olives. The pot does the work over hours. - 03
Harira
· Tomato, lentil, and chickpea soup thickened with flour, eaten with dates. The dish that breaks the fast every night of Ramadan. - 04
Khobz
· Round flatbread baked in communal wood ovens, often from dough the household mixed at home. It functions as the cutlery. - 05
Mechoui
· Whole lamb slow roasted in a pit or clay oven until it pulls apart. Sold by weight from mid-morning, with cumin and salt. - 06
Mint tea
· Green tea, a great deal of fresh mint, and more sugar than expected, poured from a height. Refusing a glass is genuinely rude.
Practical notes
Meal timing, tipping, payment
Lunch is the main meal, from 13:00. Dinner is late and lighter, though riads serve set menus from 19:30. Friday lunch is couscous and much of the medina slows for prayers. Ramadan reshapes hours completely, with almost nothing open in daylight and the city eating after sunset. Cash everywhere in the medina. Alcohol is rare outside hotels and the new town.
