The guide
Saigon eats sweeter, richer, and later than Hanoi, and it is far more willing to absorb something new. The south had money, French colonial habits, and a Chinese business community in Cholon, and the food shows all three. Broths carry sugar. Herbs arrive by the plateful. Portions are larger. The city is also the one place in Vietnam where street food, mall food courts, and serious restaurants coexist without anyone finding it strange. Motorbikes are the delivery infrastructure and the seating plan; a great many meals here are eaten within a metre of one.
Where to focus
Four neighbourhoods to anchor a few days of eating
District 1
The centre, with Ben Thanh market and most of the hotels. Convenient, more expensive than anywhere else here, and still full of decent street stalls on the side lanes.
District 3
Next to the centre and much more residential. Com tam counters, banh mi carts, and the coffee shops locals actually sit in.
Cholon (District 5)
The Chinese quarter, the largest in Vietnam. Herbal soups, roast meats, and hu tieu stalls that have run for generations.
Binh Thanh
Across the canal and rapidly changing. Night food streets, seafood restaurants, and prices that drop the further from District 1 you go.

· Broken rice with grilled pork chop, shredded pork skin, and a steamed egg cake. Saigon's own dish, eaten at any hour. - 02
Banh mi
· Richer than the northern version, with more pate, mayonnaise, and pickle. Sold from carts on nearly every corner before 9:00. - 03
Hu tieu
· Clear pork noodle soup with Chinese-Cambodian roots, served dry or in broth. The Cholon versions are the ones to seek out. - 04
Banh xeo
· Turmeric rice flour crepe filled with pork and shrimp, wrapped in mustard leaf and herbs, dipped in fish sauce. Eaten with your hands. - 05
Goi cuon
· Fresh rice paper rolls with pork, shrimp, and herbs, served cold with peanut sauce. Not fried, and not spring rolls. - 06
Ca phe sua da
· Robusta dripped through a metal filter over condensed milk and ice. Strong enough to change the shape of an afternoon.
Practical notes
Meal timing, tipping, payment
Breakfast stalls run from 6:00 and clear out by 10:00. Lunch 11:00 to 13:00. Street food resumes from around 17:00 and runs late, particularly in Districts 3 and 5. Cash in small notes for anything on the pavement. Traffic makes short distances slow; a ride app is cheap and easier than crossing on foot. Tipping is not expected.
