Kuala Lumpur is three cuisines sharing a city without merging: Malay, Chinese, and Tamil, each with its own restaurants, its own hours, and its own rules about what goes with what. The overlap happens at the mamak stall, run by Indian Muslims, open through the night, and the closest thing the country has to neutral ground. Food here is cheap, heavily spiced, and eaten constantly. The heat pushes most serious eating into the evening. Hawker centres and kopitiams do the work that restaurants do elsewhere, and the best version of almost any dish comes from a stall that sells only that dish.
Where to focus
Four neighbourhoods to anchor a few days of eating
Jalan Alor
The best-known food street, off Bukit Bintang. Chinese seafood, satay, and grilled everything from around 17:00 until very late. Touristed but the volume keeps quality up.
Brickfields
Little India, south of the centre. Banana leaf rice at lunch, sweet shops, and the Tamil vegetarian places that fill at noon with office workers.
Chow Kit
The wet market and the surrounding Malay food stalls. Nasi lemak in the morning and the least polished eating in the city centre.
Kampung Baru
A Malay village that the skyline grew around and never absorbed. Wooden houses, nasi campur, and a Saturday night market.

The dishes the city is known for

Nasi lemak
· Coconut rice with sambal, anchovies, peanuts, egg, and cucumber, wrapped in banana leaf. Breakfast, and the national dish by common agreement. - 02
Char kway teow
· Flat rice noodles fried hard over very high heat with prawns, egg, and bean sprouts. The smokiness is the point and it cannot be reproduced at home. - 03
Banana leaf rice
· Rice with vegetable sides, curry, and pickle served on a leaf, refilled until you fold it. Tamil, and the standard Brickfields lunch. - 04
Roti canai
· Flaky flatbread slapped and stretched on a hot plate, served with dhal or curry. Mamak food, available at any hour. - 05
Satay
· Skewered marinated meat grilled over coals with a thick peanut sauce. Ordered by the dozen, and the sauce differs by stall. - 06
Cendol
· Shaved ice with coconut milk, palm sugar, and green rice flour jelly. Sold from carts and necessary in this climate.
Practical notes
Meal timing, tipping, payment
Breakfast from 7:00 at kopitiams, lunch 12:00 to 14:30, and street food from 18:00 until after midnight. Mamak stalls do not really close. Cash for hawker stalls. Many Malay places shut on Friday afternoons for prayers, and hours shift substantially during Ramadan, when the evening bazaars are worth planning around. Tipping is not expected.
