The guide
Naples invented pizza. Not the laminated, sourdough, kale-topped pizza of the new wave; the pizza margherita, the dough cooked in 60 seconds in a 480-degree wood oven, the kind that arrives so wet in the middle you eat it with a knife and fork until the last quarter, when you fold it and finish standing up. The city outside that one dish is the food capital of southern Italy, which is to say of a region poorer and less visited than Tuscany but with a deeper bench of dishes the rest of the world copies. Slow ragù simmered for the better part of a day. Fried street food eaten out of paper cones. Coffee bars that pour 60 espressos an hour. Naples is loud, chaotic, occasionally hostile to outsiders, and it is also the best eating in Italy that you can do on a working person's budget.

Four neighbourhoods to anchor a few days of eating
Centro Storico
The UNESCO-listed old city. Spaccanapoli runs straight through it; this is where Da Michele, Gino Sorbillo, and a dozen lesser-known pizza institutions sit within a ten-minute walk. Eat at lunch when the queues are shorter.
Quartieri Spagnoli
Old Spanish-garrison quarter built into the hillside above the centro. Narrow alleys, laundry overhead, family trattorias with eight tables and no menus. Authentic in the way the centro can't be anymore.
Chiaia & Mergellina
Posher waterfront neighbourhood. Seafood places facing the bay, gelato at Chalet Ciro, the fancier end of Neapolitan dining. Sunset dinners here when the weather's right.
Vomero
Above the city on the hill, reached by funicular. Where Neapolitans go to eat away from the tourist crush of the centro. Best for pastries and a long lunch.

Pizza margherita
· San Marzano tomato, fior di latte or mozzarella di bufala, basil, oil. Cooked 60–90 seconds at 480°C in a wood oven. The original. Eat it at the oven. - 02
Sfogliatella
· Flaky shell-shaped pastry filled with ricotta and candied orange peel. Best hot from a bakery in the centro; loses something within an hour of leaving the oven. - 03
Ragù napoletano
· Slow-cooked beef-and-pork tomato sauce, simmered six to eight hours. Served on Sunday with paccheri or ziti, the meat as a second course. - 04
Friggitoria
· Fried street food sold from hole-in-the-wall counters: arancini, panzarotti, frittatine, sfogliatella riccia. Two euros, eaten standing up while walking. - 05
Mozzarella di bufala
· Buffalo-milk mozzarella, made fresh that morning in Campania. Eaten alone or with a tomato, with bread, ideally before noon while it's still warm. - 06
Espresso
· Stronger and sweeter than the Roman or Florentine pour, often pre-sugared at the bar. €1 at the counter; no second cup, no milk after breakfast.
Practical notes
Meal timing, tipping, payment
Pizzerias open at 12:30 and again at 19:30; the best ones queue from 19:00 onwards. Cash is still king at the old institutions. Tipping is not expected; round up. Petty theft is a real concern in the centro. No phone in the back pocket, no bag dangling. Pizza places do takeaway folded in paper; eat it within ten minutes or it loses its texture.
