The guide

San Sebastián is a small Basque city on the Atlantic coast that punches multiple weight classes above its size. It has more Michelin stars per capita than anywhere in the world, three of them at Arzak alone, and yet the defining food experience here is a five-euro pintxo eaten standing at the bar. The Parte Vieja, the old quarter, contains roughly forty pintxo bars in a few square blocks. Each does one or two things outrageously well. The system is the pintxo crawl: one drink, one bite, move to the next bar. The seafood is fresh from the bay you can see from the kitchen window. The Basque steaks are aged longer and cut thicker than anything in mainland Spain. The dessert reference is the burnt Basque cheesecake, which started here and now travels.


Where to focus

Four neighbourhoods to anchor a few days of eating

Parte Vieja (Old Town)

The dense knot of streets south of the harbour. Pintxo bars three doors apart, all night. Calle 31 de Agosto, Calle Fermin Calbeton, and the streets feeding off them. Crawl one drink at a time, leave when locals leave.

Gros

Across the Urumea river, less polished, more residential. The surf neighbourhood. Newer wave of pintxo bars open by chefs trained at Arzak and Mugaritz. Less queue, often better food.

Centro & Antiguo

The shopping-and-business centre between the two bays. Lunch spots that serve menú del día (set lunch for 12–15€) where office workers eat. Antiguo is residential and quiet at night.

Igeldo

The funicular-accessed hill west of La Concha. Sidrerías (cider houses) and txuleta steak places aimed mostly at locals. Best on weekends when the cider season runs January–April.


What to eat

The dishes the city is known for

    Pintxo

    · Basque tapa: a single bite on a slice of bread, held together with a toothpick. The standard count is the toothpicks left on your plate. Pay before leaving.
  2. 02

    Gilda

    · An olive, an anchovy, and a guindilla pepper on a skewer. The original pintxo, invented in San Sebastián in the 1940s. Salty, sharp, perfect with a vermut.
  3. 03

    Txuleta

    · Basque-style bone-in steak from old dairy cows, aged 60 days, grilled over oak charcoal, served rare. Bar Néstor on Calle Pescadería is the legendary version; the line forms an hour before opening.
  4. 04

    Bacalao al pil-pil

    · Salt cod in an emulsion of its own gelatin, olive oil, and garlic. The technique looks like sorcery; the result is unctuous. A Basque cornerstone.
  5. 05

    Tarta de queso

    · Burnt Basque cheesecake. Crustless, cooked at very high heat until the top blackens, with a barely-set centre. Invented at La Viña in the 1990s and now everywhere; the original is still the best.
  6. 06

    Sidra natural

    · Basque hard cider, dry and slightly sour, poured from height to aerate. The traditional accompaniment to txuleta. Most cider houses do a fixed menu of cod omelette, txuleta, and cheese.

Practical notes

Meal timing, tipping, payment

Pintxo bars are walk-in; lunch 13:00 to 15:30, dinner from 20:00. Arzak and other Michelin-tier kitchens require booking weeks ahead. Tipping is minimal: round up at bars, 5% at sit-down. Most bars take cards, but cash speeds things up at counter-only places. Late January through April: txuleta season at the cider houses; book ahead.
