What to eat

The dishes the city is known for

   Korean barbecue

   · Pork belly or beef grilled at the table, wrapped in lettuce with garlic, ssamjang, and rice. Ordered for two minimum at most places.
2. 02

   Kimchi

   · Fermented cabbage with chilli and salted seafood, made in autumn for the year. Dozens of regional and seasonal versions beyond the cabbage one.
3. 03

   Bibimbap

   · Rice with vegetables, meat, egg, and gochujang, mixed thoroughly before eating. The stone bowl version crisps the bottom layer.
4. 04

   Tteokbokki

   · Rice cakes in a sweet chilli sauce, sold from street carts. The most popular snack in the country and hotter than it looks.
5. 05

   Samgyetang

   · Whole young chicken stuffed with rice and ginseng in broth. Eaten on the hottest days of summer, which is deliberate.
6. 06

   Naengmyeon

   · Cold buckwheat noodles in chilled broth, from the north. Cut with scissors at the table and eaten after grilled meat.

Practical notes

Meal timing, tipping, payment

Lunch 12:00 to 13:00 sharp, which is when offices empty. Dinner from 18:00 and running very late. Banchan is free and refilled on request. Many barbecue places will not serve a single diner. Cash is rarely needed since card and phone payment work everywhere. Tipping is not practised and can cause confusion. Pour drinks for others rather than yourself.
