Seville invented the tapa or at least made the strongest claim to it, and the city still eats standing at a bar more readily than sitting at a table. Andalusian cooking is Moorish underneath: almonds, cumin, spinach with chickpeas, fried fish in a light dusting of flour that the whole Mediterranean copied. Summer heat runs past 40 degrees and dictates everything, which is why gazpacho and its thicker cousin salmorejo exist and why nothing happens between 15:00 and 20:00. Sherry from Jerez an hour south is the correct drink and is misunderstood almost everywhere else.

Four neighbourhoods to anchor a few days of eating
Santa Cruz
The old Jewish quarter beside the cathedral, narrow and whitewashed. Beautiful and heavily touristed, so choose bars a lane or two off the main routes.
Triana
Across the river, historically the ceramics and flamenco quarter. Old tabancos, the covered market, and a fiercely local identity.
Alameda de Hércules
North of the centre around a long plaza. Younger, cheaper, and where the modern tapas kitchens and vermouth bars opened.
Feria & Macarena
Working neighbourhoods with the oldest market in the city on Calle Feria. Bars where a tapa still costs a couple of euros.

The dishes the city is known for

Salmorejo
· Cold tomato and bread cream, thicker than gazpacho, topped with jamón and egg. Cordoban in origin, eaten here all summer. - 02
Pescaíto frito
· Small fish floured and fried fast in olive oil, served in a paper cone. Judged on lightness, not on batter. - 03
Espinacas con garbanzos
· Spinach and chickpeas with cumin and paprika. Directly Moorish, and a fixture on tapas boards during Lent. - 04
Jamón ibérico
· Acorn-fed black pig ham, sliced by hand and served at room temperature. Ordered by grade, with bellota at the top. - 05
Sherry
· Fino and manzanilla are bone dry and chilled, nothing like the sweet stuff sold abroad. The natural pairing for fried fish. - 06
Torrijas
· Bread soaked in milk and honey, fried, and spiced. Made at Easter, and worth timing a visit around.
Practical notes
Meal timing, tipping, payment
Lunch 14:00 to 16:00, dinner from 21:00, and almost everything closes in between. Order tapas one or two at a time and keep going rather than filling the table at once. Standing at the bar is often cheaper than a table, and terrace prices are higher again. Service is not tipped heavily; rounding up is normal. July and August are brutally hot and many kitchens close for part of it.
