The guide
Georgian food is having a moment internationally and Tbilisi is where to understand why. The cooking sits between Europe, Persia, and the Caucasus, using walnuts, pomegranate, coriander, and a spice mix called khmeli suneli in ways no neighbouring cuisine quite does. Wine has been made here for eight thousand years, fermented in buried clay vessels called qvevri, which is now protected by UNESCO and copied by natural winemakers everywhere. The supra, a long feast run by a designated toastmaster, is the format most meals aspire to. Prices are very low by European standards and portions assume you brought company.
Where to focus
Four neighbourhoods to anchor a few days of eating
Old Town (Abanotubani)
Sulphur bathhouses, balconied houses, and the most touristed restaurants. Still worth it for khinkali and the view up to Narikala.
Vera & Sololaki
Leafy, residential, and where the younger chefs and natural wine bars opened. Walkable from the centre and much less of a performance.
Marjanishvili
Across the river, once the Jewish and Armenian quarter. Bakeries selling shoti from tone ovens, plus canteens serving workers at lunch.
Dezerter Bazaar
The central market. Cheese, churchkhela, spice mounds, and stalls selling wine from plastic bottles. Where to see the larder the restaurants draw on.
What to eat
The dishes the city is known for

Khachapuri
· Cheese bread, and the Adjaruli version is a boat shape with an egg and butter stirred into the molten centre. Shared, not eaten alone. - 02
Khinkali
· Twisted soup dumplings filled with spiced meat. Held by the top knot, bitten, drunk, and the knot left on the plate to be counted. - 03
Pkhali
· Vegetables minced with walnut, garlic, and herbs, formed into small mounds and topped with pomegranate. Spinach and beetroot are standard. - 04
Mtsvadi
· Pork or lamb skewered and grilled over grapevine cuttings, served with raw onion and pomegranate. No marinade, and none needed. - 05
Churchkhela
· Walnuts threaded on string, dipped in thickened grape must and dried. Sold in bundles at every market, and older than most European countries. - 06
Qvevri wine
· Fermented with skins in buried clay, producing amber whites with grip. Saperavi is the red to ask for.
Practical notes
Meal timing, tipping, payment
Lunch 13:00 to 15:00, dinner from 19:00 and running long. Portions are large and ordering three dishes between two is usually enough. Tipping is 10 percent and increasingly added to the bill. Cash is useful outside the centre. Toasting at a supra follows a strict order led by the tamada and cutting across it is a real breach.
